Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs, separated
  • 1 cup buttermilk
  • 2 tablespoons unsalted butter, melted and cooled
  • 1/2 teaspoon vanilla extract
  • Butter or oil for greasing the æbleskiver pan
  • Powdered sugar, jam, or maple syrup for serving (optional)

Instructions:

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

  2. In a separate bowl, whisk together the egg yolks, buttermilk, melted butter, and vanilla extract until well combined.

  3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix; a few lumps in the batter are okay.

  4. In another clean mixing bowl, beat the egg whites until stiff peaks form.

  5. Gently fold the beaten egg whites into the batter until just incorporated. The batter should be light and fluffy.

  6. Preheat your æbleskiver pan over medium heat. Lightly grease each well with butter or oil.

  7. Fill each well of the æbleskiver pan about two-thirds full with batter using a spoon or a squeeze bottle.

  8. Cook the æbleskivers for 2-3 minutes, or until the bottoms are golden brown and crispy.

  9. Using a skewer or chopstick, carefully flip each æbleskiver over to cook the other side. Cook for an additional 2-3 minutes, or until golden brown and cooked through.

  10. Transfer the cooked æbleskivers to a plate and repeat the process with the remaining batter, greasing the pan as needed between batches.

  11. Serve the warm æbleskivers immediately, dusted with powdered sugar and accompanied by jam or maple syrup if desired.

  12. Enjoy these delightful Danish treats as a delicious breakfast or snack!

Feel free to experiment with different fillings such as chocolate chips, fruit preserves, or even savory options like cheese and herbs. Enjoy your homemade æbleskivers!
