Our Cast Iron Garlic Roaster is built for more than garlic, and this recipe proves it: roast a whole head of garlic until sweet and spreadable, then nestle a wheel of brie right alongside it for the last few minutes so it melts into one warm, shareable appetizer.
Ingredients
1 whole head of garlic
1 small wheel of brie (4 to 5 oz)
1 to 2 tbsp olive oil
A few sprigs of fresh thyme
Salt and black pepper
Honey, for drizzling (optional)
Crusty bread or crackers, for serving
Method
Preheat your oven to 400°F (204°C). Slice the top off the garlic head to expose the cloves.
Set the garlic in the roaster's base, drizzle with olive oil, season with salt and pepper, and tuck in a sprig of thyme. Cover with the vented lid.
Roast for about 40 minutes, until the cloves are soft and golden — the steam vent in the lid helps concentrate the flavor as it cooks.
About 10 minutes before the garlic is done, unwrap the brie and nestle it into the roaster next to the garlic head. Return to the oven, uncovered, for the final 10 minutes, until the brie is soft and melted at the center.
Squeeze the roasted garlic cloves out of their skins and swirl them into the warm brie right in the pan. Drizzle with honey if using, and serve straight from the roaster with crusty bread or crackers.
